Tasting Notes
Mayor de Castilla Toro Roble is a red cherry color wine with violet rims.
On the nose is fruity with an intense and clean aroma. On the mouth is fleshy, well-balanced and with long fruity retronasal and full of harmony.
Fermenting process
Grapes of this Roble wine comes from the own vineyards or from selected plots, property of the farmers who are kept a close contact during the year.
The harvest is late, made towards the 2nd week of October, with the purpose of getting a high concentration of polyphones and a good extract. However, with the pruning is regulated the amount of grapes in each vineyard. The objective is performed easily, since the medium yield of the rainfed vineyard rarely is up to 5.000kg/ hectare.
The Mayor de Castilla Roble maceration is long, about 25-30 days, with soft pumping over. Once is racked and lightly pressed, is moved to barrels where it will do the malolactic fermentation.
The time in barrel is extended to 190 days, alternating oak wood of different backgrounds. Supplement, the time that stays in the bottle in the winery helps it to have an exceptional quality that it will maintain its better expression and it will be enhanced in the next years.
