Tasting notes

Mayor de Castilla Reserva is a Ribera Del Duero ruby red color wine with light tile rims, limpid and silky.

It has a large coexistence in primary and barreling aromas. Light touches of leather and mature berries. Touch balanced, rounded and balsamic, it has a long way with a positive evolution on the mouth.

Fermenting process

it is carried out a monitoring during the year to the vineyards of Ribera Del Duero, we choose those that, because of the terrain and the climatology conditions, deserve special attention to intended to the barreling process.

The variety Tinta Del País is picked up manually with the intention of obtaining the maximum polyphenolic load. It is usually about the 2nd half of October and it still the bunch of grapes fresh and smooth.

The harvest, the transfer and the fermentation, it is proceed slowly, with care and giving them time to do the transfer of all the potential that enclose each grape to the wine, that little by little is being structured. It is last longer than 30 days the contact of the skins, the racking is by gravity, without pressure, and rushing every drop that flows, moving the desire expression.

The wood takes part since the end of the fermentation, and with the different racking that it is having, is getting rich with the different precedence and the ages of the oaks where it spends 12 months, and that it is given the desire oral touch.
This barreling time is proceeding the year after the elaboration process, thus its bottled period it spends 24 months.
