The Chardonnay, native from the same town of its name in the Burgundy (France), is one of the grapes to elaborate white wine with more presence in the world vine-growing, known because of its nobility as the queen of the white grapes, and of the two varieties more important in the elaboration of Champagne. It is a vigorous vine, with early sprouting. Its period of collection is short, and should be careful about the low consistency of their skin. Its bunch is small, amber-colored grapes, small and spherical, with slim skin, consistence pulp and sugared flavor. The Chardonnay is a French grape internationally widespread and mainly cultivate in Australia, California, Argentina, Brazil, Chile, Uruguay and South African.
In fact, it is said that it is the most popular variety in the world. Regarding to Spain is one of the foreign variety more extended (it is cultivated in the whole country excepting in Galicia, Asturias, Canarias and Madrid), and it is harvested in Penedés (Cataluña) to the elaboration of the cava. According to the regulations *, the Chardonnay: -It is recommend to the autonomous communities of Aragón, Cataluña, Extremadura, Navarra, País Vasco, La Rioja y Valencia community. – It is authorized in Andalucía, Baleares, Cantabria, Castilla-La Mancha, Castilla y León y Murcia.
*Orden APA/1819/2007, the 13th June, by amending annex V, about the classification of the vine variety, of the Real Decreto 1472/2000, 4th of August , by regulating the potential wine production.
The Chardonnay id the second variety in importance to the red wines in the D.O La Mancha, after the Cencibel and it is characterized because of its productivity. Other names with which it is known: Auxois Blanc, Blanc, Gentil Blanc, Morillón, Morillón Blanc, Melón Blanc, Negret Blanc, Pinot Chardonnay, Rulander y Weisser.

Wines of García Carrión produced with the variety Chardonnay are the Jaume Serra White wine (D.O Penedés), some of the cavas of Jaume Serra (D.O Cava) and Opera Prima chardonnay (La Mancha).
