Tasting notes

This Jaume Serra Semi Dry is a cava with straw yellow color with greens tones. It is bright and with abundant small bubble and regular vertical detachment, forming a crown.
Good aromatic intensity On the nose, with complex notes and fruits sensations. Good constitution in mouth, balanced, silky, soft and with a good retronasal via.
 

Fermenting process

To make this cava we chose the best white wines of Macabeo, Parellada and Xare-lo grapes and after adding the sugar and the selected yeasts it was made the second fermentation in the bottle (traditional method) in our cellars at a temperature never more than 16ºC to get a persistence and small bubble. Bottles have rested in our underground cellars in the most strict darkness and silence during a minimum of 12 months.
 

Servicing recommendations

We recommend serving this Jaume Serra very cold, between 4 and 6º C.
 

Pairing

We recommend accompanying this Cava Semi Dry with smoked fish and caviar.
