Tasting notes

Castillo San Simón red wine is ruby red with crimson tones, medium coat color, limpid and bright. Its aroma is fresh and fruity, keeping all the qualities of the Monastrell variety. On the mouth is tasty and easy to drink.

Fermenting process

This red wine has been elaborated with the predominant variety of the D.O. Jumilla, Monastrell grape. After four days of macerations at 28 ºC of temperature, the grape juice is fermented in stainless steel tanks. Concluded the malolactic fermentation proceed to its typification in big packaging with the purpose of maintain the quality in the bottled successive.

Servicing recommendation

We recommend serving Castillo San Simón red wine between 16 - 18 ºC of temperature.
