Castillo San Simon Crianza is a dark cherry red color because of its barreling time. Its aroma is complex, highlighting spicy of vanilla, cinnamon and coffee, fruit aromas and own aromas of the raising. On the mouth is a tasty, balanced and expressive wine. Fermenting process
To differ in 15 days the maturity date of the varieties that compound it (Tempranillo and Monastrell), the elaboration of this wine is varietal being the highest fermentation temperature and the longest maceration for the Tempranillo than the Monastrell, to extract the aroma from the first and the body and tannins from the second. Finished the alcoholic and malolactic fermentation, the wine was racked and blending the indicate proportions to go to the barreling time.The barreling time of this wine includes six months in stainless steel tanks and other six months in American oak barrels.
