Tasting Notes

This Opera Prima Tempranillo has an attractive ruby red color and clean, with blue rims due to its youth.

On the nose this wine has an intense fruity aroma typical of the variety, red and black fruits, blueberries, blackberries, blackberry bush, strawberries, raspberries, redcurrants with fallen leaves aromas and interesting floral aromas as violets and roses.

On the mouth it reflects the explosion of the red and black fruits aromas. Reappear the retronasal aromas founded in the nose.

Fermenting process

To obtain this young and very fresh wine we adapt the harvest day to the optimum state of maturity for this type of wine, this moment is when we find in our vineyard the best acidity and sugar.

Before the alcoholic fermentation grapes were at a temperature of 10º C during 48 hours to extract, in the absence of alcohol, the tartaric components that produce the aromas of this variety, as well as the anthocyanins that produces blue and deep red colors.

At the beginning of the alcoholic fermentation, the temperature is below 25º C. to preserve the aromatic potential previously removed. When two thirds parts of sugar had fermented we made the run off, cooling the must wine to 20º C. (stabilization) to conclude the alcoholic fermentation in stainless steel tanks

Service Recommendations

We recommend serving this D.O. La Mancha at 16° C. of temperature, and half an hour before opening to be oxygenated.
