Tasting notes

Mayor de Castilla Rosé is a live cherry wine; it is fresh and lively with balanced acidity, but maintains a wide structure and has a good memory in the aftertaste.

Fermenting process

Followed to the fermentation goes the cold maceration of 12 hours with the skins. It racked by gravity through the skins, supplying a clean grape juice that maintains its fermentation constant, rich in limpid and fruity aromas.

During the fermentation it maintained a rigorous control of the temperature between 14 - 16º C, being that developed with selected yeasts that maintaining the primitive characteristics of the variety, highlighting its youth and floras appearance.

Servicing recommendations

We recommend serving Mayor de Castilla Rosé between 7 - 9º C.

Mayor de Castilla Rosé accompanies nuts, pickles and marinades. It is an ideal wine to have appart from meals.
