Tasting notes

Castillo San Simon Reserva has an intense ruby garnet color with tile colors. Its aroma is in fruit tones of the Monastrell variety (to mature fruit). In the mouth is tasty, with sweet tannins, balanced wine with a little astringency that it is the guarantee to have a perfectly evolution.

Fermenting Process

This wine has been elaborated with the best grapes of the D.O. Jumilla. After a maceration of eight days at 28 ºC, in stainless steel tanks, the wine is racked to finish the alcoholic fermentation. After finish that, It is made the malolactic fermentation, with that is considered microbiologically done.

Below for one year it is conserved in tanks in which it is suffered three racked before doing the barreling time. the raising of this Reserva compound twelve months in Allier French oak barrels and six months in the bottle.

Servicing recommendations

We recommend serving Castillo San Simon Reserva at room temperature, proximally at 18 ºC.

Pairing

This Reserva D.O. Jumilla is ideal to go with red meats, roasts and much mature cheese.
